I found the original recipe on Allrecipes.com. I have altered it a little bit, but the basic recipe is a good foundation to start with.

2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter | 3/4 cup brown sugar 2 eggs, beaten 2 1/3 cups mashed overripe bananas(or as many bananas as you have in your kitchen. We usually use 6.) 1/2 teaspoon vanilla extract for flavor Granulated sugar to sprinkle on top of muffins |
DIRECTIONS:
| 1. | Preheat oven to 350 degrees F (175 degrees C). Put liners into muffin pan. |
| 2. | In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to combine. The batter will be moist. Pour batter into muffin pan.    |
| 3. | Bake in preheated oven for 30 to 35 minutes. Sprinkle granulated sugar on muffin tops after 20 minutes of cooking. Muffins are ready when a toothpick inserted into center and comes out clean.
